200g unsalted butter, softened
200g caster sugar
3 large eggs, room temperature
200g all-purpose flour
1.5 tsp baking powder
1 tsp ground cardamom
1/4 tsp salt
150g fresh apricots, pitted and sliced (or soaked dried apricots)
100g Greek yogurt
Juice of 1 lemon
Juice of 1 orange
50g granulated sugar for the drizzle

Instructions

Step 1: Preheat your oven to 180°C (350°F) and grease a 9-inch cake tin. Line the bottom with parchment paper for easy removal of the sticky apricot cardamom cake with citrus drizzle.
Step 2: In a large bowl, cream the butter and caster sugar together until light and fluffy, usually about 5 minutes with an electric mixer.
