1 cup Medjool dates, pitted and chopped
1 cup boiling water
1 tsp baking soda
1/2 cup unsalted butter, softened
3/4 cup brown sugar, packed
2 large eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt
1 1/2 cups carrots, finely grated
1/2 cup chopped walnuts (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease and line a 9×5 inch loaf pan with parchment paper.
Step 2: In a small bowl, combine the chopped dates, boiling water, and baking soda. Let it sit for 10-15 minutes until the dates are soft.
Step 3: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
Step 4: Beat in the eggs one at a time, followed by the vanilla extract.
Step 5: In a separate bowl, whisk together the flour, cinnamon, ginger, and salt.
Step 6: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 7: Stir in the grated carrots, the date mixture (including the soaking liquid), and walnuts if using.
Step 8: Pour the batter into the prepared loaf pan and smooth the top.
Step 9: Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Step 10: Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
