Ingredients
1.5 cups Medjool dates, pitted and chopped
1 cup boiling water
1 tsp baking soda
1/2 cup unsalted butter, softened
3/4 cup brown sugar, packed
2 large eggs
1.5 cups all-purpose flour
1 tbsp fresh ginger, finely grated
1 tsp ground ginger
1 tsp baking powder
1/2 tsp salt
For the Syrup: 1 cup heavy cream, 1/2 cup butter, 1 cup brown sugar, Zest of 2 oranges, 2 tbsp orange juice
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan.
Step 2: In a medium bowl, combine the chopped dates, baking soda, and boiling water. Let sit for 15-20 minutes until dates are soft.
Step 3: In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time.
Step 4: Stir in the fresh grated ginger and the date mixture (including the liquid).
Step 5: Sift in the flour, ground ginger, baking powder, and salt. Gently fold until just combined.
Step 6: Pour the batter into the prepared pan and bake for 40-45 minutes, or until a skewer inserted comes out clean.
Step 7: To make the syrup, combine the cream, butter, brown sugar, orange zest, and juice in a saucepan. Bring to a simmer over medium heat for 5 minutes until thickened.
Step 8: Poke holes in the warm pudding and pour half the syrup over it. Serve slices with the remaining warm syrup.
Notes
Use fresh ginger for the best spicy kick. Medjool dates provide the most authentic texture.
