1 1/2 cups all-purpose flour
1 tsp baking soda
1 tbsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp salt
1/2 cup unsalted butter, softened
1/2 cup dark brown sugar, packed
1 large egg
1/2 cup unsulphured molasses
1 tbsp freshly grated ginger
1/2 cup boiling water
1 cup granulated sugar (for sauce)
1/2 cup fresh orange juice
2 tbsp fresh lemon juice
1 tbsp orange zest
1 tsp lemon zest

Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish with butter or parchment paper.
Step 2: In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
Step 3: In a large mixing bowl, cream the softened butter and dark brown sugar together until light and fluffy. Beat in the egg, then stir in the molasses and freshly grated ginger.
Step 4: Gradually add the dry ingredients to the wet mixture, alternating with the boiling water. Stir until just combined; the batter will be thin.
Step 5: Pour the batter into the prepared baking dish and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: While the pudding bakes, prepare the citrus sauce. Combine the granulated sugar, orange juice, lemon juice, orange zest, and lemon zest in a small saucepan over medium heat.
Step 7: Bring the sauce to a gentle simmer, stirring until the sugar dissolves. Let it simmer for 5-7 minutes until slightly thickened. Set aside.
Step 8: Once the pudding is done, remove it from the oven and poke several holes across the surface with a skewer. Pour half of the warm citrus sauce over the hot pudding.
Step 9: Let the pudding sit for 10 minutes to absorb the sauce. Serve warm with the remaining sauce drizzled over individual portions.

Notes

Ensure your molasses is not ‘sulphured’ as it can be too bitter. For extra moisture, let the pudding soak in the sauce for at least 15 minutes before serving.
