Ingredients
1.5 cups Medjool dates, pitted and chopped
1 cup boiling water
1 tsp baking soda
1/2 cup unsalted butter, softened
3/4 cup brown sugar
2 large eggs
1 tbsp orange zest
1/4 cup fresh orange juice
1.5 cups all-purpose flour
1 tsp baking powder
1/2 cup walnuts, toasted and chopped
For the Sauce: 1 cup heavy cream, 1/2 cup butter, 1 cup brown sugar, 2 tbsp orange juice
Instructions
Step 1: To begin your sticky orange date pudding with toasted walnuts, preheat your oven to 350°F (175°C) and grease a 9-inch square baking dish.
Step 2: Combine the chopped dates, boiling water, and baking soda in a bowl; let sit for 15 minutes to soften the dates for the sticky orange date pudding with toasted walnuts.
Step 3: In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
Step 4: Beat in the eggs one at a time, then stir in the orange zest and juice.
Step 5: Gently fold in the flour and baking powder until just combined, followed by the date mixture and half of the toasted walnuts.
Step 6: Pour the batter into the prepared dish and bake for 35-40 minutes until the center of the sticky orange date pudding with toasted walnuts is set.
Step 7: While the pudding bakes, combine sauce ingredients in a saucepan over medium heat, simmering until thickened.
Step 8: Pour half the warm sauce over the hot pudding, sprinkle with remaining walnuts, and serve warm with extra sauce.
Notes
Always use fresh orange zest for the best aroma. Medjool dates provide the softest texture.
