Ingredients
1/2 cup unsalted butter, softened
4 oz cream cheese, softened
3/4 cup granulated sugar
1/4 cup light brown sugar, packed
1 large egg, room temperature
1 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup freeze-dried strawberries, lightly crushed
1/2 cup white chocolate chips (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone baking mats.
Step 2: In a large mixing bowl, beat together the softened butter and cream cheese until smooth and creamy.
Step 3: Add the granulated sugar and brown sugar to the butter mixture, beating for about 2 minutes until light and fluffy.
Step 4: Mix in the egg and vanilla extract until well combined, scraping down the sides of the bowl as needed.
Step 5: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 6: Gently fold in the crushed freeze-dried strawberries and white chocolate chips using a spatula.
Step 7: Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheets, spaced 2 inches apart.
Step 8: Bake for 10-12 minutes, or until the edges are set and just beginning to turn golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Always use brick-style cream cheese for the best results. Freeze-dried strawberries provide the best flavor without making the dough too wet.
