Ingredients
4 cups crushed strawberries (about 2 lbs fresh berries)
1.5 cups granulated sugar
1 box (1.75 oz) instant fruit pectin
1 tablespoon lemon juice (optional, for brightness)
Instructions
Step 1: Wash and hull the fresh strawberries, then place them in a large bowl and crush them thoroughly with a potato masher until you have 4 cups of fruit.
Step 2: In a separate large mixing bowl, stir together the granulated sugar and the instant pectin until well combined.
Step 3: Add the crushed strawberries and the lemon juice to the sugar and pectin mixture.
Step 4: Stir the mixture constantly for 3 minutes to ensure the pectin and sugar are fully dissolved into the fruit juices.
Step 5: Ladle the jam into clean jars or freezer-safe containers, leaving 1/2 inch of headspace at the top.
Step 6: Place lids on the containers and let them sit at room temperature for 24 hours to set, then move to the freezer for long-term storage.
Notes
Ensure you use instant pectin rather than regular pectin for the no-cook method. Always use ripe, high-quality fruit.
