Ingredients
2 tsp ceremonial grade matcha powder
4 tbsp hot water (not boiling, approx 175°F)
1 cup fresh strawberries, hulled and chopped
2 tbsp granulated sugar or honey
1/2 cup quick-cooking boba pearls
1 cup whole milk or oat milk
Ice cubes as needed
1 tbsp brown sugar (for boba syrup)
Instructions
Step 1: In a small bowl, combine chopped strawberries and sugar. Let them sit for 10 minutes, then mash with a fork or blend into a puree for the base of your strawberry matcha boba drink.
Step 2: Cook the boba pearls according to package instructions. Once tender, drain and toss with brown sugar to keep them sweet and moist.
Step 3: Sift the matcha powder into a bowl. Add the hot water and whisk vigorously in a zig-zag motion with a bamboo whisk until frothy and clump-free.
Step 4: In two tall glasses, divide the strawberry puree and the cooked boba pearls equally at the bottom.
Step 5: Fill each glass 3/4 full with ice cubes. Slowly pour the milk over the ice to create the middle layer of the strawberry matcha boba drink.
Step 6: Carefully pour the whisked matcha over the top of the milk to create the final green layer. Serve with a wide boba straw.
Notes
Always use ceremonial grade matcha for the best flavor and color. Ensure your water is not boiling to prevent bitterness.
