Ingredients
1 cup (120g) glutinous rice flour (mochiko)
1/4 cup (50g) granulated sugar
3/4 cup (180ml) water
20–24 small to medium fresh strawberries, washed and thoroughly dried
1/2 cup cornstarch, for dusting (plus more as needed)
Optional: 1-2 drops red food coloring
Instructions
Step 1: In a microwave-safe bowl, whisk together the glutinous rice flour and granulated sugar until well combined.
Step 2: Gradually add the water to the dry ingredients, stirring constantly with a rubber spatula until the mixture is smooth and lump-free. If using, add a drop or two of red food coloring and mix well.
Step 3: Cover the bowl tightly with plastic wrap, leaving a small vent on one side. Microwave on high for 1 minute. Carefully remove and stir the dough vigorously with the spatula.
Step 4: Re-cover and microwave for another 1 minute. Stir again. The dough will start to thicken and become translucent in spots.
Step 5: Cover and microwave for a final 30 seconds to 1 minute, or until the dough is fully translucent and sticky, resembling a thick, cohesive paste. Be careful, it will be very hot. The total microwave time for your strawberry mochi bites easy recipe may vary depending on your microwave’s power.
Step 6: Generously dust a clean, flat work surface (like a large cutting board or silicone mat) with cornstarch. Carefully transfer the hot, sticky mochi dough onto the cornstarch-dusted surface. Sprinkle more cornstarch over the top of the dough.
Step 7: Once the dough is cool enough to handle, use a rolling pin (also lightly dusted with cornstarch) to gently roll out the mochi dough to about 1/8 to 1/4-inch thickness. You can also gently press it out with your well-dusted hands.
Step 8: Using a 2-inch round cookie cutter or a sharp knife, cut out circles of mochi dough. You should get about 20-24 circles. Keep any unused dough and cut circles covered to prevent drying out. This ensures your strawberry mochi bites stay pliable.
Step 9: Ensure your fresh strawberries are completely dry. If they are large, you may gently trim them to a more manageable size for wrapping.
Step 10: Take one mochi circle and place a prepared strawberry in the center. Carefully stretch the edges of the mochi dough up and around the strawberry, sealing it completely at the bottom. Pinch the seams together firmly to fully encase the fruit. Dust your fingers with cornstarch as needed.
Step 11: Gently roll the mochi-wrapped strawberry in your hands to create a smooth, round ball. Place the finished strawberry mochi bites on a plate or tray lightly dusted with cornstarch to prevent sticking. Repeat with the remaining mochi dough and strawberries.
Step 12: Serve your homemade strawberry mochi bites immediately for the best texture and flavor. If storing, place in an airtight container at room temperature for up to 24 hours. Mochi is best fresh as refrigeration can make it firm. Enjoy this delightful strawberry mochi bites easy recipe!
Notes
Mochi is best served fresh on the day it’s made. If storing, keep in an airtight container at room temperature for up to 24 hours. Do not refrigerate for extended periods as it will harden the mochi.
