Ingredients
1/2 cup old-fashioned rolled oats
1/2 cup milk of choice (almond, soy, or dairy)
1/4 cup plain Greek yogurt
1 teaspoon chia seeds
1/2 cup fresh strawberries, chopped
1 tablespoon maple syrup or honey
1/4 teaspoon vanilla extract
A pinch of salt
Instructions
Step 1: In a mason jar or a small glass container, combine the rolled oats, chia seeds, and a pinch of salt.
Step 2: Add the milk, Greek yogurt, maple syrup, and vanilla extract to the dry ingredients. Stir thoroughly to ensure everything is well-combined.
Step 3: Gently fold in the chopped strawberries. If you prefer a pinker color, mash a few of the strawberries before stirring them in.
Step 4: Secure the lid on the container and place it in the refrigerator for at least 4 hours, or ideally overnight (6-8 hours).
Step 5: In the morning, give the oats a good stir. If they are too thick, add a splash of milk. Top with additional fresh strawberries and enjoy cold.
Notes
Use gluten-free oats if necessary. These stay fresh in the fridge for up to 4 days.
