Ingredients
1/2 cup small sago (tapioca) pearls
2 cups fresh strawberries, hulled
1 cup coconut milk
1/2 cup evaporated milk
1/4 cup sweetened condensed milk (adjust to taste)
1/2 cup whole milk (optional, for thinning)
Fresh mint leaves for garnish
Instructions
Step 1: Bring 6 cups of water to a boil in a large pot. Add the sago pearls and stir immediately to prevent sticking.
Step 2: Simmer the sago for 10-12 minutes over medium heat, stirring occasionally, until the pearls are mostly translucent with a tiny white speck in the center.
Step 3: Turn off the heat, cover the pot with a lid, and let the sago sit for another 10 minutes until completely clear.
Step 4: Drain the sago through a fine-mesh sieve and rinse thoroughly under cold running water to remove excess starch. Set aside.
Step 5: Take half of the strawberries (1 cup) and blend them with the coconut milk, evaporated milk, and sweetened condensed milk until smooth.
Step 6: Finely dice the remaining 1 cup of strawberries.
Step 7: In a large mixing bowl, combine the cooked sago pearls, the blended strawberry cream, and the diced strawberries. Stir well.
Step 8: Chill the strawberry sago dessert in the refrigerator for at least 2 hours before serving. Garnish with mint if desired.
Notes
For the best results, use very ripe strawberries. If the dessert becomes too thick after chilling, stir in a little extra milk to reach your desired consistency.
