1 lb fresh strawberries, hulled and sliced
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract (optional)
1 tablespoon water (if needed)
Instructions
Step 1: In a medium saucepan, combine the sliced strawberries, sugar, and lemon juice over medium heat.
Step 2: Use a potato masher or a fork to lightly crush some of the berries to release their juices as they heat up.
Step 3: Bring the mixture to a gentle simmer, stirring frequently to ensure the sugar dissolves completely and doesn’t burn.
Step 4: Simmer for 8-10 minutes until the sauce has thickened slightly and the strawberries are soft but still hold some shape.
Step 5: Remove from heat and stir in the vanilla extract if using. Let the strawberry sauce recipe cool slightly before serving; it will continue to thicken as it cools.
Notes
If using frozen strawberries, increase the cook time by 3-5 minutes. For a perfectly smooth sauce, blend the finished mixture and strain through a fine-mesh sieve.
