Ingredients
4 boneless, skinless chicken breasts (about 6 oz each), pounded to 3/4-inch thickness
1/4 cup olive oil, plus 1 tbsp for cooking
Juice of 1 large lemon (about 3 tbsp)
Zest of 1 large lemon
3 cloves garlic, minced
2 tbsp fresh basil, chopped (for marinade)
1 tbsp fresh thyme, chopped
1 tsp fresh oregano, chopped
1/2 tsp salt, plus more to taste
1/4 tsp black pepper, plus more to taste
For the Peach & Basil Salsa:
2 ripe peaches, diced
1/4 small red onion, finely diced
1 small jalapeño, seeded and minced (optional)
1/4 cup fresh basil, chopped (for salsa)
1 tbsp lime juice
Pinch of salt
Instructions
Step 1: Prepare the Chicken. Pat chicken breasts dry with paper towels. If very thick, gently pound to about 3/4-inch thickness for even cooking.
Step 2: Make the Marinade. In a medium bowl or a resealable bag, combine 1/4 cup olive oil, lemon juice, lemon zest, minced garlic, 2 tbsp chopped fresh basil, thyme, oregano, 1/2 tsp salt, and 1/4 tsp black pepper. Whisk until well combined.
Step 3: Marinate the Chicken. Add the prepared chicken breasts to the marinade, ensuring they are fully coated. Refrigerate for at least 30 minutes, or up to 2 hours. Discard any remaining marinade after use.
Step 4: Prepare the Peach & Basil Salsa. While the chicken marinates, dice peaches, finely chop red onion, minced jalapeño (if using), and 1/4 cup fresh basil. In a small bowl, combine all salsa ingredients with lime juice and a pinch of salt. Gently stir and set aside.
Step 5: Cook the Chicken. Heat 1 tbsp olive oil in a large skillet over medium-high heat, or preheat your grill to medium-high. Remove chicken from marinade (discarding marinade). Cook chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C).
Step 6: Rest and Serve. Transfer cooked chicken to a cutting board and tent with foil; let rest for 5 minutes. Slice against the grain. Serve immediately, topped generously with the fresh Peach & Basil Salsa.
Notes
For best results, use fresh, ripe peaches. If grilling, ensure your grill grates are clean and oiled to prevent sticking. Leftovers are delicious cold in salads!
