Ingredients
1.5 lbs chicken thighs or breasts
1/4 cup extra virgin olive oil
2 lemons, zested and juiced
3 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
Instructions
Step 1: In a large glass bowl or resealable bag, whisk together the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper to create the marinade for your Summer chicken recipes.
Step 2: Add the chicken to the marinade, ensuring every piece is well-coated. Seal the container and refrigerate for 30 minutes to 2 hours.
Step 3: Preheat your outdoor grill to medium-high heat (approximately 400°F). Lightly oil the grill grates to prevent sticking.
Step 4: Place the chicken on the grill. Cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) using a meat thermometer.
Step 5: Remove the chicken from the grill and transfer it to a clean plate or cutting board. Let it rest for 5-10 minutes before slicing to keep the juices inside.
Step 6: Garnish with extra fresh herbs and lemon wedges before serving.
Notes
For the best results with Summer chicken recipes, use a meat thermometer to avoid overcooking. Thicker chicken breasts may require slightly longer grill times.
