2 tbsp fresh lemon juice
1 tsp lemon zest
3 cloves garlic, minced
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried rosemary
1 tsp salt, divided
1/2 tsp black pepper, divided
2 medium zucchini, chopped into 1-inch pieces
2 bell peppers (any color), chopped into 1-inch pieces
1 red onion, chopped into 1-inch pieces
1 pint cherry tomatoes, halved
Fresh parsley or basil, chopped (for garnish)

Instructions

Step 1: In a large bowl, combine the chicken pieces with 2 tablespoons olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, rosemary, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss to coat well. Let marinate at room temperature for 15-20 minutes, or refrigerate for up to 30 minutes.
Step 2: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 3: In a separate large bowl, combine the chopped zucchini, bell peppers, red onion, and cherry tomatoes. Drizzle with a tablespoon of olive oil, and season with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss to coat.
Step 4: Arrange the marinated chicken pieces evenly on one half of the prepared baking sheet. Spread the seasoned vegetables in a single layer on the other half of the baking sheet. Ensure not to overcrowd the pan; use two pans if necessary.
Step 5: Roast for 20-25 minutes, or until the chicken is cooked through (internal temperature 165°F / 74°C) and the vegetables are tender-crisp and slightly caramelized. Flip or stir halfway through cooking for even browning.
Step 6: Remove from the oven. Squeeze a little extra fresh lemon juice over the entire dish and garnish generously with fresh parsley or basil. Serve immediately.

Notes

For best results, do not overcrowd the baking sheet. If you have a smaller pan or a larger quantity of food, use two baking sheets to ensure vegetables roast rather than steam, leading to better caramelization and flavor.
