Ingredients
1.5 lbs large shrimp, peeled and deveined
3 large zucchinis, spiralized
3 tbsp extra virgin olive oil
3 cloves garlic, minced
1 tsp lemon zest
2 tbsp fresh lemon juice
1/4 cup fresh parsley, chopped
2 tbsp fresh basil, chopped
1/2 tsp salt
1/4 tsp black pepper
Optional: Red pepper flakes for heat
Instructions
Step 1: In a medium bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, parsley, basil, salt, and pepper to create the marinade.
Step 2: Add the shrimp to the marinade and toss well to ensure every piece is coated. Let it sit for 15-20 minutes at room temperature.
Step 3: While the shrimp marinates, spiralize the zucchini into noodles. Place them in a colander, sprinkle with a pinch of salt, and let them sit for 10 minutes to drain excess water, then pat dry.
Step 4: Pre-heat a grill pan or outdoor grill to medium-high heat. Grill the shrimp for 2-3 minutes per side until pink and opaque.
Step 5: In a large skillet over medium heat, sauté the zucchini noodles for 2-3 minutes until just tender. Do not overcook.
Step 6: Remove from heat, toss the grilled shrimp with the zoodles, and serve immediately with extra lemon wedges.
Notes
To keep the zucchini noodles from getting watery, ensure you pat them dry thoroughly after salting and only sauté them for a very short period.
