Ingredients
1 1/2 cups all-purpose flour
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/4 tsp salt
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup heavy whipping cream
2 cups assorted fresh fruit (strawberries, blueberries, kiwi, raspberries, peaches)
1/4 cup apricot preserves
1 tbsp water
Instructions
Step 1: Cream the butter and granulated sugar together until smooth, then mix in the egg and 1/2 tsp of vanilla.
Step 2: Stir in the flour and salt until a dough forms. Wrap and chill for 1 hour.
Step 3: Roll the dough and press into a 9-inch tart pan. Prick with a fork and freeze for 15 minutes.
Step 4: Bake at 375°F for 15-18 minutes until golden. Let the crust cool completely.
Step 5: Beat cream cheese, powdered sugar, and remaining vanilla. Fold in whipped heavy cream and spread into the crust.
Step 6: Arrange sliced fruit on top. Glaze with melted apricot preserves and water mixture.
Notes
Always dry your fruit thoroughly after washing to keep the filling from becoming watery.
