2 medium yellow summer squash, sliced into 1/2 inch rounds
2 medium zucchini, sliced into 1/2 inch rounds
3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and lightly grease a large rimmed baking sheet with olive oil or parchment paper.
Step 2: In a large mixing bowl, combine the sliced yellow squash and zucchini with olive oil, minced garlic, oregano, salt, and pepper. Toss well to ensure every slice is coated.
Step 3: Spread the squash slices onto the prepared baking sheet in a single layer, ensuring they are not overlapping.
Step 4: Roast in the oven for 15 minutes. Remove the pan and sprinkle the grated Parmesan cheese evenly over the vegetables.
Step 5: Return to the oven and roast for an additional 5 minutes, or until the squash is tender and the cheese is golden and bubbly.
Step 6: Garnish with fresh parsley and serve immediately.
Notes
For best results, use fresh squash and do not overlap slices on the pan.
