Ingredients
300g dried egg noodles or rice noodles
500g chicken breast or thighs, diced
3 tbsp smooth peanut butter
4 tbsp sweet chilli sauce
2 tbsp soy sauce
1 tbsp lime juice
3 cloves garlic, minced
1 tsp fresh ginger, grated
2 tbsp vegetable oil
Optional: 1/2 cup reserved noodle water
Garnish: Chopped peanuts, spring onions, and cilantro
Instructions
Step 1: Cook the noodles in a large pot of boiling water according to package directions. Reserve 1/2 cup of noodle water before draining.
Step 2: In a small bowl, whisk together the peanut butter, sweet chilli sauce, soy sauce, and lime juice until smooth.
Step 3: Heat oil in a wok or large skillet over medium-high heat. Add the chicken and cook until golden and cooked through, about 5-7 minutes.
Step 4: Add the minced garlic and grated ginger to the pan and sauté for 1 minute until fragrant.
Step 5: Reduce heat to medium. Add the cooked noodles and the sauce mixture to the pan.
Step 6: Toss everything together, adding the reserved noodle water a little at a time until the sauce is creamy and coats the noodles evenly.
Step 7: Serve immediately garnished with crushed peanuts, sliced spring onions, and fresh cilantro.
Notes
For a spicier kick, add a teaspoon of sriracha or red pepper flakes to the sauce mixture. Use rice noodles for a gluten-free option.
