Ingredients
1 cup finely chopped pecans
1 cup graham cracker crumbs
1/2 cup brown sugar, packed
1/4 cup unsweetened cocoa powder
1/4 cup corn syrup
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup powdered sugar (for rolling)
Additional chopped pecans for coating (optional)
Instructions
Step 1: In a large mixing bowl, combine the finely chopped pecans, graham cracker crumbs, brown sugar, cocoa powder, corn syrup, softened butter, vanilla extract, and salt.
Step 2: Using your hands or a spatula, mix until all ingredients are well combined and form a sticky dough.
Step 3: Take about a tablespoon of the mixture and roll it into a firm ball between your palms. Repeat until all the mixture is used, placing the balls on a baking sheet lined with parchment paper.
Step 4: In a shallow dish, add the powdered sugar and additional chopped pecans (if using). Roll each ball in the powdered sugar mixture until well coated.
Step 5: Place the baking sheet with the coated balls in the refrigerator for at least 30 minutes to allow them to firm up.
Step 6: Once chilled, serve the pecan pie balls on a platter and enjoy your delicious no-bake treats!
Notes
For an extra touch, drizzle melted chocolate over the chilled balls before serving. These can be stored in an airtight container in the refrigerator for up to a week, or frozen for longer storage.
