Ingredients
2 large sweet potatoes, peeled and diced into 1-inch cubes
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt

1 (15-ounce) can black beans, rinsed and drained
1 cup corn (fresh, frozen, or canned)
1 large avocado, diced
1/4 cup finely chopped red onion
1/4 cup fresh cilantro, chopped
For the Lime-Cilantro Dressing:
3 tablespoons olive oil
2 tablespoons fresh lime juice
1 tablespoon honey or maple syrup (optional)
1 clove garlic, minced
2 tablespoons chopped fresh cilantro
1/4 teaspoon salt
Pinch of black pepper
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, combine the diced sweet potatoes, 1 tablespoon olive oil, chili powder, cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss until the sweet potatoes are evenly coated.
Step 3: Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until fork-tender and lightly caramelized, flipping halfway through. Set aside.
Step 4: While the sweet potatoes are roasting, prepare the lime-cilantro dressing. In a small bowl, whisk together 3 tablespoons olive oil, fresh lime juice, honey/maple syrup (if using), minced garlic, 2 tablespoons chopped cilantro, 1/4 teaspoon salt, and a pinch of black pepper until well combined.
Step 5: Assemble your bowls. Divide the roasted sweet potatoes, rinsed black beans, corn, diced avocado, and chopped red onion evenly among four serving bowls.
