1 1/2 cups all-purpose flour

1 cup sweet potato puree (roasted and mashed)
1 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
Step 2: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves until well combined.
Step 3: In a large bowl, beat the sugar, vegetable oil, eggs, and vanilla extract until the mixture is smooth and slightly pale.
Step 4: Stir in the sweet potato puree to the wet ingredients until fully incorporated.
Step 5: Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula until no dry streaks remain. Do not overmix.
Step 6: Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Roasted sweet potatoes provide a better flavor than boiled ones. Ensure the puree is cooled before adding to the batter.
