Ingredients
1 large Japanese or Purple sweet potato
1/2 cup dried black tapioca pearls (boba)
2 cups whole milk or oat milk
2 tablespoons honey or maple syrup
1 cup brewed black tea, cooled
Ice cubes (optional)
2 tablespoons brown sugar (for boba syrup)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Prick the sweet potato with a fork, wrap it in foil, and roast for 45 minutes or until completely soft.
Step 2: While the potato roasts, bring a pot of water to a boil. Add the tapioca pearls and cook according to package instructions (usually 5-10 minutes). Drain and toss with 1 tablespoon of brown sugar.
Step 3: Once the sweet potato is roasted and cooled slightly, remove the skin. Place the flesh into a blender with the milk and sweetener.
Step 4: Blend on high until the mixture is completely smooth and frothy. This forms the base of your sweet potato bubble tea recipe.
Step 5: In two tall glasses, add the cooked tapioca pearls. Fill the glasses halfway with ice if desired, then pour in the brewed tea followed by the sweet potato milk mixture. Stir and enjoy!
Notes
For a thinner consistency, add more tea. For a thicker, shake-like texture, use less milk and more roasted potato.
