4 large eggs

Optional: 1 cup chopped kale or spinach

Instructions

Step 1: Heat the olive oil in a large cast-iron skillet over medium-high heat until shimmering.
Step 2: Add the diced sweet potatoes to the skillet in a single layer. Season with salt and pepper. Let them cook undisturbed for 5-7 minutes to develop a golden-brown crust.
Step 3: Stir the potatoes and add the diced red onion and bell pepper. Continue cooking for another 8-10 minutes, stirring occasionally, until the potatoes are tender and the onions are translucent.
Step 4: Stir in the minced garlic, smoked paprika, and cumin. Cook for 1-2 minutes until fragrant. If using kale or spinach, stir it in now until wilted.
Step 5: Use a large spoon to create four small wells in the hash. Carefully crack one egg into each well.
Step 6: Reduce the heat to medium-low, cover the skillet with a lid, and cook for 3-5 minutes, or until the egg whites are set but the yolks are still runny.
Step 7: Remove from heat, garnish with fresh herbs, and serve your sweet potato hash with fried eggs immediately.

Notes

For extra crispiness, ensure the sweet potatoes are completely dry after peeling and dicing before adding them to the hot oil.
