1 cup sweet potato puree (roasted and mashed)

Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan or line it with parchment paper for easy removal.
Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
Step 3: Beat in the egg, sweet potato puree, 1/4 cup maple syrup, and vanilla extract until well combined and smooth.
Step 4: In a separate medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Step 6: Spread the batter evenly into the prepared baking pan.
Step 7: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: While the bars are cooling slightly, whisk together the powdered sugar and 3 tablespoons of maple syrup to create a smooth glaze.
Step 9: Drizzle the glaze over the warm bars and allow them to cool completely before slicing into 16 squares.
Notes
For the best results, use home-roasted sweet potatoes rather than canned puree. Ensure the bars are completely cool before storing in an airtight container.
