1 3/4 cups all-purpose flour
1 teaspoon baking soda

1/4 teaspoon ground nutmeg
1 cup sweet potato puree (roasted and mashed)
1/2 cup pure maple syrup
1/2 cup packed light brown sugar
1/2 cup unsalted butter, melted
2 large eggs, room temperature
1 teaspoon vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
Step 2: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and nutmeg until well combined.
Step 3: In a large bowl, whisk together the melted butter, maple syrup, and brown sugar until smooth. Add the eggs one at a time, followed by the vanilla extract and sweet potato puree, mixing until fully incorporated.
Step 4: Gently fold the dry ingredients into the wet ingredients using a spatula. Stir just until no flour streaks remain, being careful not to overmix.
Step 5: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Step 6: Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Allow the sweet potato maple bread to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
Notes
For best results, roast fresh sweet potatoes rather than using canned. Ensure eggs are at room temperature to prevent the melted butter from seizing.
