2 cups mashed cooked sweet potatoes

3/4 cup brown sugar, packed
1/2 cup evaporated milk

1/4 tsp ground ginger
1/2 tsp salt
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, ensuring some overhang for easy removal.
Step 2: In a medium bowl, combine the flour, softened butter, and granulated sugar. Mix until a crumbly dough forms, then press it firmly into the bottom of the prepared pan.
Step 3: Bake the crust for 12-15 minutes or until the edges are just starting to turn golden brown. Remove from the oven and set aside.
Step 4: In a large mixing bowl, whisk together the mashed sweet potatoes, eggs, brown sugar, evaporated milk, cinnamon, nutmeg, ginger, and salt until completely smooth.
Step 5: Pour the sweet potato filling over the pre-baked crust and spread it evenly with a spatula.
Step 6: Bake for 35-40 minutes, or until the filling is set around the edges but still has a slight jiggle in the center.
Step 7: Allow the bars to cool completely in the pan at room temperature, then refrigerate for at least 2 hours before lifting them out and slicing into squares.
Notes
For the best flavor, roast your sweet potatoes in their skins at 400°F until tender before peeling and mashing.
