Ingredients
2 cups roasted and mashed sweet potatoes
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup whole milk
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 unbaked 9-inch pie crust
Instructions
Step 1: Preheat your oven to 400°F (200°C). Prick sweet potatoes with a fork and roast for 50-60 minutes until very soft. Let them cool, then peel and mash until smooth.
Step 2: Lower the oven temperature to 350°F (175°C).
Step 3: In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
Step 4: Add the eggs one at a time, beating well after each addition. Stir in the mashed sweet potatoes, milk, vanilla, cinnamon, nutmeg, and salt. Mix until fully combined and smooth.
Step 5: Pour the sweet potato mixture into the unbaked pie crust. Smooth the top with a spatula.
Step 6: Bake for 55 to 60 minutes, or until the center is set and a knife inserted comes out clean.
Step 7: Allow the pie to cool completely on a wire rack for at least 2 hours before slicing to ensure the custard sets properly.
Notes
For the smoothest texture in this sweet potato pie recipe, pass the mashed potatoes through a sieve before mixing.
