2 large sweet potatoes, peeled and diced into 1-inch cubes
1 tablespoon olive oil
1/2 teaspoon smoked paprika
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
Salt and black pepper to taste
1 (15-ounce) can black beans, rinsed and drained
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
2 avocados, diced
1 cup cooked brown rice or quinoa (optional, for serving)
For the Lime Dressing:
3 tablespoons olive oil
2 tablespoons fresh lime juice
1 tablespoon maple syrup or honey
1/2 teaspoon ground cumin
Salt and pepper to taste
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, toss the diced sweet potatoes with 1 tablespoon olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper until evenly coated.
Step 3: Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
Step 4: While the sweet potatoes are roasting, prepare the black beans. In a medium saucepan, combine the rinsed and drained black beans with 1/4 cup water, chopped red onion, and half of the chopped cilantro. Simmer over medium heat for 5-7 minutes, stirring occasionally, until heated through and slightly thickened. Season with a pinch of salt and pepper.
Step 5: Prepare the lime dressing. In a small bowl, whisk together 3 tablespoons olive oil, fresh lime juice, maple syrup (or honey), ground cumin, salt, and pepper until well combined.
Step 6: Assemble the power bowls. Divide cooked brown rice or quinoa (if using) among four serving bowls. Top with roasted sweet potatoes, seasoned black beans, and diced avocado.
