Maple Pecan Roasted Sweet Potatoes

2 lbs sweet potatoes, peeled and cut into 1-inch cubes
2 tbsp olive oil
3 tbsp pure maple syrup
1 tsp ground cinnamon
1/2 tsp salt
1/4 tsp black pepper
1/2 cup chopped pecans

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, combine the cubed sweet potatoes, olive oil, maple syrup, ground cinnamon, salt, and black pepper. Toss everything together until the sweet potatoes are evenly coated.
Step 3: Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Ensure they are not overcrowded to allow for proper caramelization.
Step 4: Roast for 15 minutes. Remove the baking sheet from the oven, add the chopped pecans, and toss gently with the sweet potatoes. Return to the oven.

Notes
