Ingredients
1 large head of cauliflower, cut into bite-sized florets
1/2 cup all-purpose flour
1/4 cup cornstarch
1/2 tsp salt
1/2 tsp garlic powder
1/2 cup cold sparkling water
1/2 cup pineapple juice
1/4 cup rice vinegar
1/4 cup ketchup
2 tbsp soy sauce
1/3 cup brown sugar
1 tbsp freshly grated ginger
2 cloves garlic, minced
1 tbsp cornstarch mixed with 1 tbsp water (slurry)
Oil for frying
Green onions and sesame seeds for garnish
Instructions
Step 1: Prepare the cauliflower by washing and cutting it into uniform florets to ensure even cooking.
Step 2: In a large bowl, whisk together the flour, 1/4 cup cornstarch, salt, and garlic powder. Slowly add the sparkling water until a smooth batter forms.
Step 3: Heat oil in a deep skillet or preheat your air fryer to 400°F. Dip each cauliflower floret into the batter, letting excess drip off, then fry or air fry until golden brown and crispy.
Step 4: In a separate saucepan over medium heat, combine the pineapple juice, rice vinegar, ketchup, soy sauce, brown sugar, ginger, and minced garlic.
Step 5: Bring the sauce to a gentle simmer and stir in the cornstarch slurry. Continue to whisk until the sauce thickens and becomes glossy.
Step 6: Place the crispy cauliflower in a large mixing bowl and pour the hot sauce over it. Toss gently until every piece is coated.
Step 7: Serve immediately garnished with sliced green onions and toasted sesame seeds.
Notes
For maximum crunch, serve immediately after tossing in the sauce.
