Ingredients
1/2 cup honey (or maple syrup for vegan)
1/4 cup Gochujang (Korean chili paste) or Sriracha
2 tablespoons rice vinegar
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon brown sugar (packed)
1 teaspoon sesame oil (optional, for aroma)
1/2 teaspoon garlic powder (or 1 clove minced fresh garlic)
1/4 teaspoon ground ginger (or 1/2 tsp fresh grated ginger)
Pinch of red pepper flakes (optional, for extra heat)
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry, for thickening)
Instructions
Step 1: In a medium saucepan, combine the honey (or maple syrup), Gochujang (or Sriracha), rice vinegar, soy sauce, brown sugar, sesame oil (if using), garlic powder, ground ginger, and red pepper flakes (if using).
Step 2: Whisk all ingredients together until well combined and the brown sugar has dissolved.
Step 3: Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally. Allow it to simmer for 2-3 minutes, letting the flavors meld.
Step 4: While the sauce is simmering, prepare the cornstarch slurry by whisking 1 tablespoon of cornstarch with 2 tablespoons of cold water in a small bowl until smooth.
Step 5: Slowly pour the cornstarch slurry into the simmering sauce while whisking continuously. Continue to whisk for another 1-2 minutes until the sauce thickens to your desired consistency. It should coat the back of a spoon.
Step 6: Remove the saucepan from the heat. Taste the sauce and adjust seasonings if necessary. You might want to add more honey for sweetness, more Gochujang for heat, or a splash more vinegar for tang.
Step 7: Allow the sauce to cool completely before transferring it to an airtight container. It will thicken further as it cools. Store in the refrigerator for up to 2 weeks. Enjoy your delicious homemade ‘swicy’ sauce with your favorite dishes!
