1 can (15 oz) black beans, rinsed and drained

2 cups cooked brown rice or quinoa
4 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/2 cup shredded cheddar cheese or dairy-free alternative
1/4 cup chopped fresh cilantro

Instructions
Step 1: Prepare your grains. If you haven’t already, cook your brown rice or quinoa according to package instructions. This can often be done ahead of time to save precious minutes.
Step 2: Brown the meat. Heat olive oil in a large skillet over medium-high heat. Add the ground turkey or beef and cook, breaking it up with a spoon, until fully browned. Drain any excess fat.
Step 3: Sauté aromatics. Add the chopped onion to the skillet with the browned meat and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Step 4: Season the meat. Stir in the taco seasoning and water. Bring to a simmer, then reduce heat and let it cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Step 7: Add warm fillings. Spoon the seasoned meat, black bean, and corn mixture over the lettuce.
Step 8: Pile on the fresh toppings. Arrange the cherry tomatoes, sliced red onion, shredded cheese, and fresh cilantro over the warm mixture.
