Ingredients
1 lb lean ground beef
2 cups cooked white or brown rice
1 packet taco seasoning (or homemade blend of cumin, chili powder, garlic)
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn, thawed
1 cup shredded cheddar cheese
1 large avocado, sliced
1/2 cup sour cream or Greek yogurt
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
1/2 cup salsa of choice
Instructions
Step 1: Cook the rice according to package directions or use a rice cooker for a fluffy base for your taco rice bowl recipe.
Step 2: In a large skillet over medium-high heat, brown the ground beef until no longer pink, then drain any excess grease.
Step 3: Add the taco seasoning and 1/4 cup of water to the beef. Simmer for 5 minutes until the sauce thickens and coats the meat.
