The Ultimate Easy Taco Salad Recipe: Fresh, Flavorful, and Fast!

This easy taco salad recipe is packed with seasoned ground beef, fresh crisp lettuce, juicy tomatoes, and a creamy, zesty dressing. Perfect for a quick weeknight dinner or a satisfying meal prep.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 lb (450g) lean ground beef (or ground turkey/chicken)
1 tbsp olive oil
1 packet (1 oz / 28g) taco seasoning
1/2 cup water
6 cups chopped romaine lettuce (or iceberg)
1 cup chopped cherry tomatoes (or 2 medium tomatoes, diced)
1/2 cup canned black beans, rinsed and drained
1/2 cup canned corn, drained
1/4 cup chopped red onion
1/4 cup shredded cheddar cheese (or Mexican blend)
1/4 cup crushed tortilla chips (for garnish, optional)
For the Creamy Taco Dressing:
1/2 cup sour cream (or Greek yogurt)
1/4 cup mayonnaise
2 tbsp lime juice
1 tbsp taco seasoning
1 tbsp chopped fresh cilantro (optional)

Instructions

Step 1: In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
Step 2: Stir in the taco seasoning and 1/2 cup of water. Bring to a simmer and cook for 3-5 minutes, or until the liquid has mostly evaporated and the meat is well coated. Remove from heat and set aside to cool slightly.
Step 3: While the meat cooks, prepare the creamy taco dressing. In a small bowl, whisk together the sour cream, mayonnaise, lime juice, 1 tablespoon of taco seasoning, and chopped cilantro (if using) until smooth and well combined. Taste and adjust seasoning if needed.
Step 4: In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, and red onion.
Step 5: To assemble the taco salad, divide the lettuce mixture among individual serving bowls. Top each with an equal portion of the seasoned ground beef.
Step 6: Drizzle generously with the creamy taco dressing. Sprinkle with shredded cheddar cheese and crushed tortilla chips, if desired. Serve immediately and enjoy your delicious taco salad recipe!

Notes

For a lighter option, use Greek yogurt instead of sour cream and skip the mayonnaise, or use a reduced-fat version. For meal prep, store the dressing and tortilla chips separately and add just before serving to prevent sogginess.
