2–3 pounds lamb ribs (breast ribs or spareribs), in racks or separated
1 tablespoon olive oil
Salt and freshly ground black pepper to taste
For the Marinade/Glaze:
1/2 cup tamarind paste (seedless)
1/4 cup soy sauce (low sodium preferred)
1/4 cup honey or maple syrup
2 tablespoons rice vinegar
2 tablespoons grated fresh ginger
4 cloves garlic, minced
1 tablespoon sriracha or chili garlic sauce (adjust to taste)
1 teaspoon toasted sesame oil
1/2 teaspoon red pepper flakes (optional)
For Garnish:
Fresh cilantro, chopped

Instructions
Step 1: Prepare the lamb ribs. If the ribs have a silverskin membrane on the back, carefully remove it using a paper towel to get a better grip. Pat the ribs dry with paper towels. Season generously with salt and pepper.
Step 2: In a large bowl, whisk together all the marinade/glaze ingredients: tamarind paste, soy sauce, honey (or maple syrup), rice vinegar, grated ginger, minced garlic, sriracha, sesame oil, and red pepper flakes (if using). This aromatic blend is key to our delicious Tamarind Glazed Lamb Ribs.
Step 3: Place the seasoned lamb ribs in a large baking dish or a sturdy resealable bag. Pour about two-thirds of the marinade over the ribs, ensuring they are well coated. Reserve the remaining one-third of the marinade for basting later.
