Ingredients
1/2 cup pure tart cherry juice (unsweetened)
2 tablespoons honey
1/4 cup water
2 sprigs fresh rosemary, plus more for garnish
1 lime, juiced
8–10 oz sparkling mineral water
Ice cubes
Instructions
Step 1: Make the rosemary honey syrup by combining 1/4 cup water, 2 tablespoons honey, and 2 rosemary sprigs in a small saucepan.
Step 2: Simmer over low heat for 5 minutes, then remove from heat and let steep for 15 minutes to infuse the flavor.
Step 3: Strain the syrup into a jar and allow it to cool completely (you can speed this up in the fridge).
Step 4: In two tall glasses filled with ice, divide the tart cherry juice and lime juice evenly.
Step 5: Add 1 tablespoon of the cooled rosemary syrup to each glass and stir well.
Step 6: Top each glass with sparkling mineral water and garnish with a fresh rosemary sprig and a lime wheel.
Notes
Use tart cherry concentrate if you want a more intense flavor; just reduce the amount to 1 tablespoon per glass.
