Ingredients
6 slices high-quality white Pullman bread
1/2 large English cucumber, thinly sliced
4 oz cream cheese, softened
1 tbsp unsalted butter, softened
1 tbsp fresh dill, finely chopped
1 tsp fresh chives, minced
1/2 tsp lemon zest
Salt and white pepper to taste
Instructions
Step 1: In a small bowl, combine the softened cream cheese, fresh dill, chives, lemon zest, salt, and white pepper. Mix until smooth and well combined.
Step 2: Slice the English cucumber into very thin rounds using a mandoline or a sharp knife. Lay the slices on a paper towel and pat them dry to remove excess moisture.
Step 3: Lay out the bread slices and spread a very thin, even layer of softened butter on one side of each slice. This acts as a barrier to prevent the tea party sandwich recipe from becoming soggy.
Step 4: Spread a generous layer of the herbed cream cheese mixture over the buttered side of three bread slices.
Step 5: Arrange the cucumber slices on top of the cream cheese, slightly overlapping them to cover the entire surface.
Step 6: Place the remaining three bread slices on top, buttered side down, to close the sandwiches.
Step 7: Using a sharp serrated knife, carefully trim off the crusts from all sides of the sandwiches. Cut each square into three even rectangular ‘fingers’ or four small triangles.

Notes
Always use English cucumbers for the best crunch and least amount of moisture. Ensure your knife is very sharp for clean cuts.
