Ingredients
2 (15-ounce) cans black-eyed peas, rinsed and drained
1 (15-ounce) can corn, drained (or 1.5 cups fresh/frozen corn, thawed)
1 red bell pepper, finely diced
1 green bell pepper, finely diced
1 yellow bell pepper, finely diced
1/2 red onion, finely diced
1/2 cup fresh cilantro, chopped
1/2 cup red wine vinegar
1/4 cup olive oil
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 teaspoon sugar
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Instructions
Step 1: In a large mixing bowl, combine the rinsed and drained black-eyed peas, drained corn, finely diced red, green, and yellow bell peppers, and the finely diced red onion.
Step 2: In a separate small bowl, whisk together the red wine vinegar, olive oil, minced garlic, chili powder, ground cumin, sugar, salt, and black pepper until well combined and the sugar has dissolved.
Step 3: Pour the dressing over the black-eyed pea and vegetable mixture. Add the chopped fresh cilantro.
Step 4: Gently toss all the ingredients together until they are evenly coated with the dressing.
Step 5: Cover the bowl and refrigerate for at least 2 hours, or preferably 4-6 hours (or even overnight) to allow the flavors to meld and deepen. Stir again before serving. This Texas caviar recipe is best served chilled.
Notes
