Ingredients
1/2 cup natural creamy peanut butter
2 tablespoons soy sauce (or tamari)
1 tablespoon rice vinegar
1 tablespoon fresh lime juice
2 tablespoons honey or maple syrup
1 teaspoon toasted sesame oil
1 teaspoon freshly grated ginger
1 clove garlic, minced
1–2 teaspoons sriracha or chili garlic sauce (optional)
2–4 tablespoons warm water (to reach desired consistency)
Instructions
Step 1: In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, lime juice, sweetener, sesame oil, grated ginger, garlic, and sriracha.
Step 2: Whisk the ingredients together vigorously. The mixture may appear thick or slightly separated at first.
Step 3: Add warm water one tablespoon at a time, whisking constantly, until the sauce reaches your desired thickness and is completely smooth.
Step 4: Taste the sauce and adjust the seasoning as needed, adding more lime for tang, honey for sweetness, or sriracha for heat.
Step 5: Transfer to a serving bowl or store in an airtight container in the refrigerator for up to one week.
Notes
If the sauce firms up in the fridge, simply whisk in a teaspoon of warm water before serving to restore the creamy texture.
