1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg, room temperature
1 tsp vanilla extract
1.5 tbsp instant espresso powder
1 3/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
4 oz mascarpone cheese, room temperature
1/2 cup powdered sugar
1/2 tsp vanilla bean paste (optional)
Unsweetened cocoa powder for dusting
Instructions
Step 1: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Step 2: Beat in the egg and vanilla extract. In a small cup, dissolve the espresso powder in 1 tsp of warm water, then add it to the wet mixture.
Step 3: Sift together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients until just combined.
Step 4: Cover the dough and refrigerate for 30-60 minutes to prevent excess spreading.
Step 5: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 6: Scoop 1.5-inch balls of dough and place them on the baking sheet. Bake for 10-12 minutes until the edges are set but the centers are still soft.
Step 7: Allow cookies to cool completely on a wire rack before frosting.
Step 8: Whisk together the mascarpone, powdered sugar, and vanilla bean paste until smooth. Pipe or spread onto cooled cookies.
Step 9: Generously dust each cookie with cocoa powder before serving.
Notes
Ensure cookies are completely cold before adding the mascarpone frosting to prevent melting.
