Instructions

Step 1: Preheat your oven to 350°F (175°C). Thoroughly grease and flour two 9-inch round cake pans.
Step 2: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until they are well combined.
Step 3: In a separate bowl, beat the softened unsalted butter until it’s light and creamy. Gradually add the dry ingredients to the butter mixture, alternating with the coconut milk. Mix until the batter is smooth and lump-free.
Step 4: Add the large eggs, vanilla extract, and the drained crushed pineapple to the batter. Mix until all ingredients are fully incorporated, but be careful not to overmix.
