Pan-Seared Lemon Garlic Tuna Steak

A restaurant-quality ahi tuna steak seared to perfection with garlic, butter, and lemon. Ready in just 15 minutes!

Ingredients

2 (6-ounce) Ahi tuna steaks, at least 1-inch thick
1 tablespoon avocado oil (or other high-heat oil)
2 tablespoons unsalted butter
3 cloves garlic, smashed
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Fresh parsley for garnish

Instructions

Step 1: Remove the tuna steaks from the refrigerator and let them sit at room temperature for about 10-15 minutes to ensure even cooking.
Step 2: Pat the tuna steaks very dry on all sides using paper towels. Season both sides generously with kosher salt and black pepper.
Step 3: Heat a cast-iron skillet or heavy stainless steel pan over medium-high heat until it is very hot. Add the avocado oil and swirl to coat the bottom of the pan.
Step 4: Carefully place the tuna steaks in the pan. Sear for 1.5 to 2 minutes without moving them to develop a deep brown crust.
Step 5: Flip the steaks. Immediately add the butter and smashed garlic cloves to the pan. As the butter melts and foams, tilt the pan and use a spoon to baste the tuna with the garlic butter for another 1.5 minutes.
Step 6: Remove the pan from the heat and squeeze fresh lemon juice over the steaks. Sprinkle with lemon zest and fresh parsley.
Step 7: Let the tuna rest for 2 minutes on a cutting board before slicing against the grain to serve.

Notes

For the best results, ensure your pan is very hot before adding the fish. Use sushi-grade tuna if you prefer a rare center.
