Ingredients
2 (6 oz each) Ahi tuna steaks, about 1-inch thick
1 tbsp olive oil
Salt and freshly ground black pepper to taste
For the Glaze:
2 tbsp soy sauce (low sodium preferred)
1 tbsp mirin or rice vinegar
1 tsp sesame oil
2 cloves garlic, minced
1/2 tsp fresh ginger, grated
Optional garnish: sesame seeds, chopped green onions
Instructions
Step 1: Pat the tuna steaks dry with paper towels. Season generously with salt and pepper on both sides.
Step 2: In a small bowl, whisk together the soy sauce, mirin (or rice vinegar), sesame oil, minced garlic, and grated ginger for the glaze. Set aside.
Step 3: Heat the olive oil in a heavy-bottomed skillet (cast iron or stainless steel works best) over medium-high heat until shimmering and almost smoking.
Step 4: Carefully place the seasoned tuna steaks into the hot skillet. Sear for 1.5 to 2 minutes per side for rare to medium-rare. Adjust cooking time based on desired doneness and thickness.
Step 5: During the last minute of cooking, pour the prepared garlic-soy glaze over the tuna steaks, allowing it to coat the fish and reduce slightly.
Step 6: Remove tuna from the pan immediately. Let the tuna rest for 1-2 minutes before slicing against the grain into 1/2-inch thick slices.
Step 7: Drizzle any remaining glaze from the pan over the sliced tuna. Garnish with sesame seeds and green onions if desired, and serve immediately.
Notes
For best results, ensure your tuna steaks are fresh, high-quality, and at least 1-inch thick. Do not overcook; ahi tuna is best served rare to medium-rare.
