Authentic Turkish Lahmacun Flatbread

A traditional Turkish street food featuring a thin, crispy dough topped with a savory, spiced minced meat mixture, herbs, and vegetables.

Ingredients

500g All-purpose flour or bread flour
300ml Lukewarm water
1 tsp Dry active yeast
1 tsp Sugar
1.5 tsp Salt
300g Minced lamb or beef (or a mix)
1 Large onion, finely minced
2 Garlic cloves, minced
1 Red bell pepper, finely minced
2 Tomatoes, deseeded and finely chopped
1/2 cup Fresh parsley, finely chopped
2 tbsp Tomato paste
1 tbsp Turkish pepper paste (Biber Salçası)
1 tsp Paprika
1/2 tsp Cumin
1/2 tsp Red pepper flakes (Pul Biber)
Salt and black pepper to taste
Lemon wedges, sliced red onions, and extra parsley for serving

Instructions

Step 1: In a small bowl, combine lukewarm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
Step 2: In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture. Knead for about 10 minutes by hand or 5 minutes in a stand mixer until the dough is smooth and elastic.
Step 3: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Step 4: While the dough rises, prepare the topping. In a food processor or by hand, finely mince the onion, garlic, red pepper, and tomatoes. Drain any excess liquid.
Step 5: Mix the minced vegetables with the meat, parsley, tomato paste, pepper paste, and spices (paprika, cumin, red pepper flakes, salt, and pepper) until well combined.
Step 6: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
Step 7: Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball.
Step 8: On a floured surface, roll out each ball into a very thin circle or oval, about 10-12 inches in diameter.
Step 9: Spread a thin, even layer of the meat mixture over the dough, pressing it down slightly with your fingers so it sticks.
Step 10: Carefully transfer the flatbread to the preheated stone or baking sheet. Bake for 5-8 minutes until the edges are golden brown and crispy and the meat is cooked through.
Step 11: Remove from the oven and immediately cover with a clean kitchen towel to keep them soft enough to roll. Serve hot with lemon, onion, and parsley.

Notes

Ensure the vegetables for the topping are very finely minced and drained of excess water to prevent a soggy crust.
