Instructions

Step 1: Prepare the Cucumber. Grate the cucumber using the large holes of a box grater. Place the grated cucumber in a clean kitchen towel, several layers of paper towels, or a cheesecloth. Gather the edges and twist tightly to squeeze out as much excess liquid as possible. This is a crucial step for a thick tzatziki; discard the liquid.
Step 2: Mince the Garlic and Chop the Dill. Peel and finely mince the garlic cloves. Wash and finely chop the fresh dill.
Step 3: Combine Ingredients. In a medium-sized mixing bowl, add the strained Greek yogurt, squeezed grated cucumber, minced garlic, chopped fresh dill, and fresh lemon juice. Pour in the extra virgin olive oil.
