Ingredients
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 1/2 cups granulated sugar
1/2 cup packed light brown sugar
1 cup vegetable oil
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups grated carrots (about 4–5 medium carrots)
1 cup chopped pecans or walnuts (optional)
For the Cream Cheese Frosting:
8 ounces cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
4 cups powdered sugar, sifted
1 teaspoon vanilla extract

Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9×13 inch rectangular pan.
Step 2: In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger until well combined. Set aside.
Step 3: In a separate large bowl, combine the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well incorporated.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
Step 5: Fold in the grated carrots and optional chopped nuts until evenly distributed.
Step 6: Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes for round pans, or 35-40 minutes for a rectangular pan, or until a wooden skewer inserted into the center comes out with moist crumbs.
Step 7: Let the cakes cool in the pans on a wire rack for 10-15 minutes, then invert them onto the rack to cool completely before frosting.
Step 8: Prepare the Cream Cheese Frosting: In a large bowl, beat the softened cream cheese and butter with an electric mixer until light and fluffy.
Step 9: Gradually add the sifted powdered sugar, one cup at a time, mixing until smooth. Beat in the vanilla extract and a pinch of salt until the frosting is creamy and spreadable.
Step 10: Once the cake layers are completely cool, frost the cake generously with the cream cheese frosting. Decorate with additional chopped nuts if desired.
Notes
For an extra layer of flavor, toast the pecans or walnuts lightly before adding them to the batter. You can also add 1/2 cup of well-drained crushed pineapple or shredded coconut for even more moisture.
