Ultimate Potato Flake Sourdough Starter

A resilient and easy-to-maintain ultimate potato flake sourdough starter that produces the softest, most delicious homemade bread and rolls.

Ingredients

1 cup warm water (110°F)
1/2 cup granulated sugar
3 tablespoons instant potato flakes
2 1/4 teaspoons (1 packet) active dry yeast

Instructions

Step 1: In a clean glass jar or plastic container, combine the warm water, sugar, potato flakes, and active dry yeast.
Step 2: Stir the mixture thoroughly until the sugar and yeast are mostly dissolved and the potato flakes are hydrated.
Step 3: Cover the container loosely with a lid or a clean cloth and let it sit at room temperature for 5 days.
Step 4: Stir the ultimate potato flake sourdough starter once daily during this 5-day period to keep the ingredients incorporated.
Step 5: On the fifth day, the starter is ready to use. Feed it with 3/4 cup sugar, 3 tablespoons potato flakes, and 1 cup warm water before refrigerating or using in a recipe.
Step 6: Store the ultimate potato flake sourdough starter in the refrigerator and feed it every 7 to 10 days to maintain peak activity.

Notes

Always use a non-metal spoon when stirring your ultimate potato flake sourdough starter to prevent any reactive metallic taste.
