The Ultimate Reuben Bake

A comforting, easy-to-make casserole that transforms the classic Reuben sandwich into a delicious oven-baked meal with layers of corned beef, sauerkraut, Swiss cheese, and rye bread.

Ingredients

1 pound thinly sliced cooked corned beef
1 (16-ounce) jar sauerkraut, thoroughly drained
8 ounces sliced or shredded Swiss cheese
½ cup Thousand Island dressing
6–8 slices rye bread (slightly stale or lightly toasted)
2 tablespoons unsalted butter, cut into small pieces
Optional: pinch of caraway seeds or dash of Dijon mustard

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
Step 2: Ensure the sauerkraut is thoroughly drained. Arrange the rye bread slices in a single layer at the bottom of the prepared baking dish.
Step 3: Spread half of the Thousand Island dressing evenly over the layer of rye bread.
Step 4: Distribute half of the thinly sliced corned beef over the dressing, followed by an even layer of half the drained sauerkraut.
Step 5: Sprinkle half of the Swiss cheese over the sauerkraut layer.
Step 6: Repeat the layering process: spread the remaining Thousand Island dressing, then add the rest of the corned beef, followed by the remaining sauerkraut and finally the rest of the Swiss cheese.
Step 7: Dot the top of the casserole evenly with the small pieces of butter. If using, sprinkle caraway seeds or drizzle Dijon mustard now.
Step 8: Bake for 30-35 minutes, or until the cheese is completely melted, bubbly, and golden brown on top, and the bread is toasted.
Step 9: Remove from the oven and let the Reuben Bake rest for about 10 minutes before slicing into squares and serving warm. Enjoy!

Notes

For an extra crispy top, you can broil for the last 1-2 minutes, watching carefully to prevent burning. Best served with a side salad to cut through the richness.
