1 lb ground beef (or sausage)
1 (10 oz) can Rotel Diced Tomatoes with Green Chilies, undrained
16 oz Velveeta cheese, cut into cubes
4 oz cream cheese, softened (optional)
Sliced jalapenos (optional)
Chili powder or taco seasoning, to taste (optional)
Instructions
Step 1: Brown the ground beef (or sausage) in a large skillet over medium heat. Drain any excess fat.
Step 2: Reduce heat to low and add the cubed Velveeta cheese to the skillet with the browned meat.
Step 3: Stir continuously until the Velveeta cheese is completely melted and smooth.
Step 4: Pour in the undrained can of Rotel Diced Tomatoes with Green Chilies and mix well.
Step 5: (Optional for extra creaminess) Stir in softened cream cheese until fully incorporated and smooth.
Step 6: (Optional for spice) Add sliced jalapenos, chili powder, or taco seasoning to taste.
Step 7: Serve hot with tortilla chips, crackers, or fresh vegetables.
Step 8: For a slow cooker method, brown the meat first, then combine all ingredients in the crock pot and cook on low for 2-3 hours, stirring occasionally.
Notes
For a thicker dip, add some cream cheese. If the dip becomes too thick during reheating, stir in a splash of milk. Experiment with different meats like turkey or sausage, and various cheeses like cheddar or pepper jack for exciting variations.
